What is Yield Management?

Yield management or automatic table assignment, is the act of bookings being placed on tables, ensuring that the table size is suitable for the guest booking. That can be as simple as sitting as group of 4 at your next available table of 4. 

But it can also mean sitting a group of 3 there, or using table chains to make a larger table by pushing them together. It can also mean only sitting certain guests at certain tables at certain times of day.  Why is Yield Management Useful?
